There's less than four weeks left to go until the end of summer, but it sure doesn't feel like it. Even today, the last day of August, there's a high of 92° F forecasted for my area... ouch. And by ouch I mean sizzle.
I'm a big fan of breakfast and brunch (and eating in general), but one of the absolute last things I want to do in the midst of a muggy summer is turn on the stove. The only air conditioning we have is in our bedroom, and I don't do a lot of cooking in there... so... yeah. Luckily there are plenty of delicious brunch-y things that can be whipped up easily and without heat. Today I thought I'd share one of my favorite such combos, AKA the tri-fruit special!
The tri-fruit special in our household consists of the following:
Fun fact: Avocados are technically a fruit. Botanically speaking they're big berries with a giant single seed in the middle! This is one of those facts that makes perfect sense if you really think about it (other fruits like peaches also have a big stone in the middle), but I never really knew until I was an adult. Go figure.
Anyway, I usually mash up my avocados with a bit of salt and pepper. Sometimes lemon juice too to keep them from browning—four fruits! Then I slice up some ripe and juicy tomatoes and sprinkle some more salt and pepper on top. Slap that all on a piece of toast and you've got something gooooood to eat while the stove remains off. I also like adding a few pieces of sweet fruit (like peaches or raspberries) to round things out. Simple as.
As for beverages—what would a summer brunch be without a bit of iced coffee?
